Card 1 of 8

Braised beef short ribs in red wine

Rich, glossy and so tender the meat slides off the bone. Lovely over mash or polenta.

Serves

Cook
3 hr 30 min

Ingredients

  • About 1.5kg beef short ribs
  • 2 tablespoons plain flour
  • 2 tablespoons olive oil
  • 1 brown onion, chopped
  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 3 garlic cloves, crushed
  • 2 tablespoons tomato paste
  • 375ml red wine
  • 500ml beef stock
  • 2 bay leaves and 4 sprigs of thyme
  • Salt and pepper

Ask us for about 1.5kg of beef short ribs.

Method

  1. Step 1: Heat the oven to 160°C. Season the ribs and dust them with the flour.
  2. Step 2: Heat the oil in a heavy casserole dish over medium-high heat. Brown the ribs well on all sides, in batches, then set aside.
  3. Step 3: Pour off most of the fat and turn the heat to medium. Cook the onion, carrot and celery for 8 minutes until soft. Add the garlic and tomato paste and cook for 1 minute.
  4. Step 4: Pour in the wine and let it bubble for 3 minutes, scraping up the brown bits from the base.
  5. Step 5: Add the stock, bay leaves and thyme, and return the ribs, bone side up, in a single layer. The liquid should come most of the way up.
  6. Step 6: Cover with a lid and cook in the oven for 3 to 3½ hours, until the meat comes away from the bone.
  7. Step 7: Lift out the ribs. Skim the fat from the sauce, simmer it on the stove until it thickens, check the seasoning, and pour it back over.
